Fresh Moringa leaves with sweet potatoes and eggs

Fresh Moringa leaves is the theme. Solar cooked Okinawa sweet potato. Sliced shallots, one or two, and a few cloves of garlic, sliced. Okinawa sweet potato is a very purple variety with a nice dense bite, locally grown in Hawaii. It does not get as soft and mushy as other sweet potatoes. It is eaten often in many dishes. One of the best and easiest ways to cook Okinawa sweet potatoes, so it stays moist and firm, is in the solar cooker.
