Okinawa sweet potato is a very purple variety with a nice dense bite, locally grown in Hawaii. It does not get as soft and mushy as other sweet potatoes. It is eaten often in many dishes. One of the best and easiest ways to cook Okinawa sweet potatoes, so it stays moist and firm, is in the solar cooker.

Mix well with two or three, or even four eggs, depending on how many people you want to feed.
